~What I did this Weekend~

How is it Monday already? What a crazy busy weekend, to be followed by a crazy busy work week getting settled at the new office!

Friday after packing at work all day (disaster zone!), we had a relaxing evening at home. My hip was really bothering me so I took it easy. We finally signed up for Netflix and watched Waiting which hubby found hilarious; me- not so much! At least Ryan Reynolds had his shirt off in one scene!!

Saturday we slept in and hubby made waffles- my favourite! In the afternoon, I met my friend J for coffee. It was nice to finally meet her in person after years of conversing virtually!

I ran a couple errands afterwards and then spent the evening doing some baking since hubby was out for the night. I've heard it's good to have some easy snacks available for those sleepless nights when the baby is first born, when the last thing on your mind is feeding yourself.

I made these granola bars that I heard about from a fellow mommy blogger, Morgan @ Mon Petit Amour.

Ingredients:

1/3 cup light peanut butter
1/3 cup pure maple syrup
2 egg whites
1 tsp pumpkin pie spice
2½ cups low-fat granola
¾ cup dried cranberries

Instructions:
Preheat oven to 250°F. Spray a 12-cup muffin tin with cooking spray and set aside.
  1. In a medium bowl, beat together peanut butter and maple syrup on medium speed of electric mixer. Add egg whites and pumpkin pie spice and beat again until smooth.

  2. Stir in granola and cranberries. Divide mixture evenly among muffin cups. Bake on middle oven rack for 45 minutes.
  3. Remove from oven and cool completely on a wire rack before removing clusters from pan. Stir in an 
  4. airtight container.

So delicious!! I put them into the freezer immediately so I don't devour them before baby is born!! I will certainly be making another batch ASAP since I know they won't last very long.

I also made a double recipe of my favourite Banana Chocolate Chip muffins. Comfort food!!

I planned to make some bran muffins but ran out of flour! We thought we had more in the basement but guessed we used it all up when doing Christmas baking last month.

Hubby also made some apple sauce which we will freeze for later consumption. In the next couple of weeks we (ok, hubby) will stock the freezer full of easy-to-make meals so that we aren't scrambling for food when we are both sleep deprived. We don't want to compromise good nutrition when we need it the most.

On Sunday I was totally spoiled at my Baby Shower hosted by my best friend, L!! It was so nice to see so many of my friends that I haven't seen in awhile. We played a couple games (I won at the baby word scramble!), ate lots of delicious food (my friend is an amazing hostess- her parties rock!) and of course ohhh and ahhh'd over all the cute baby stuff!!

While I was out, the glider arrived!! I totally wasn't expecting it for a few more weeks!! Other than a bit of organizing and art, the nursery is ready!

  4. You are so much more organized then I was! Good for you. It is a really good idea to get your freezer stocked with easy and healthy food.

  5. Yes, jam that freezer as full of casseroles and desserts as possible! I even did stuff like pre-cooking meat for tacos, topping salads, throwing into spaghetti sauce etc. Glad the shower was fun! Watch out for that book, warning: may cause tears! Hee hee.
